You can always judge a cocktail bar on its ability to make one of the classics and in this case, new kid on the block Aquavitae most certainly delivered with a perfect Cosmopolitan and Earl Grey Martini.
Having been excited since we first heard about the concept for Aquavitae – cocktails by night, coffee and grazing by day – we were lucky enough to be invited to the launch party and after being greeted with champagne upon arrival, we were not disappointed. The interior is a stark contrast from the dim old Trapeze store and showcases industrial chic with exposed brickwork, Edison light bulbs, and copper vodka jugs – we’ve already taken inspiration for remodelling our dining room!
After mingling with some of the other great local bloggers and media representatives, we ended up chatting to some of the tradespeople behind the transformation; their passion shone through and it was clear that no expense was spared in making this bar perfect. Sampling some of the innovative cocktails on offer, it was clear that this attention to detail is prevalent throughout; fresh ingredients such as basil and mint elevate their concoctions to the next level and the bar staff clearly know how to muddle and zest!
There was a constant stream of canapés flowing from the kitchen and if the crabcakes, sliders, croque monsieur and rich, spicy Bloody Marys were any indication of the regular menu, I will spend many a happy night here. A special mention must go to the chicken liver parfait which was served in a super-cute edible crispy spoon and tasted divine.
Cheltenham has been somewhat deficient of decent cocktail bars in recent times, and Aquavitae goes a long way to addressing that. With other recent openings, Regent Street and the surrounding area is fast becoming the place to be seen. Hopefully we’ll see you there soon!
